I'm also a mom who is always looking for ways to incorporate healthy meal options for my family...
and ultimately, for myself.
I obviously LOVE sweets and desserts...

BUT...believe it or not...there's more to me than just sugary treats!
I also love finding new, creative ways to introduce my kids to healthy eating options.
In fact, I'm pretty passionate about it. (when sugar isn't distracting me)!
So instead of sharing all things "sugar" with you every time I create a "Recipe Radar" post...
it only seems right to also share the other choices I'm making (or would like to make).
Today's recipe comes from Self Magazine and is something that caught my eye for several reasons:
#1: It looks appealing
#2: It's versatile
#3: It's simple and quick (something fun I can teach my girls to make)
#4: It had Carrie Underwood's name associated with it *wink*
No matter where you are on your "health journey"...
you can adapt this recipe to suit your needs.
For instance, the recipe calls for using a tortilla as the crust.
Beginners can opt to use a flour tortilla.
Intermediates can opt to use a whole grain tortilla
Advanced can use the suggested Organic Ezekiel 4:9 Sprouted Grain tortillas found at health food stores.
And for those who are sensitive to wheat...
you can also find Gluten and Wheat-Free tortillas in your local health food stores.
You can do the same thing with the cheese too. (use your favorite - Feta, Goat, or just regular ole Mozzarella).
I, myself, will be using Olive Oil or Grapeseed Oil to replace the "I Can't Believe It's Not Butter Spray".

CARRIE UNDERWOOD'S NO-GUILT VEGGIE PIZZA
serves 2
Ingredients
Vegetable oil cooking spray
I Can't Believe It's Not Butter Spray
1 Food for Life Organic Ezekiel 4:9 Sprouted Grain (or whole-grain) 9-inch tortilla
1/4 cup pizza sauce
1/4 cup 2 percent shredded mozzarella
16 slices Yves Veggie Meatless Pepperoni (or 3 slices lean sandwich meat, cut into small pieces)
Vegetable toppings of your choice
1 cup mixed greens (optional)
Preparation
Heat oven to 400°. Coat a cookie sheet or pizza stone with cooking spray. Spray I Can't Believe It's Not Butter Spray on both sides of tortilla; place tortilla on sheet; spread with pizza sauce; sprinkle with cheese. Top with pepperoni slices and your favorite vegetable toppings. Bake until tortilla is crispy and cheese has melted, about 5 minutes. Top with mixed greens, if desired. Cut into 4 slices and enjoy.

239 calories per two slices, 6 g fat (1 g saturated), 20 g carbs, 3 g fiber, 26 g protein
